Re: Nice Cream; stove-top pasteurization
Dear Governor Quinn,
This summer a small Illinois business called Nice Cream was shut down due to regulations that I believe are unfair. Ice cream must be pasteurized. Nice Cream and other small ice cream manufacturers use a method of pasteurization called “stove-top pasteurization”. This method is widely accepted in the industry as a safe and cost-effective way to make ice cream.
The regulations for pasteurizing ice cream in the State of Illinois were written for much larger ice cream manufacturers, and do not recognize this method of stove-top pasteurization. The regulations require even small companies like Nice Cream to purchase expensive and unnecessary equipment. Because of this, Nice Cream was forced to stop production this summer and lay off it’s employees.
This is not a request to loosen rules and possibly endanger anyone’s health. This is a request to formalize the stove-top method of pasteurization often used in Illinois. Nice Cream and other small Illinois ice cream makers depend on it. I support them one hundred percent.
